Baking with whole grains brings more flavor and nutrients to your finished product, but anyone who has tried to sub whole grain flour for all purpose knows it’s not so easy to get the fluffy, light tasting results you might hope for! Kneads Bakery, Cafe, and Mill has perfected the art of whole grain baking, and are coming to Lachat to let us in on some of their secrets.
By demonstrating croissant making as an example, Kneads co-owner Brittany Moreno will share her knowledge of locally sourcing grains, freshly milling flour, and baking with the freshly milled flour. In this class you will learn how to make whole grain croissants including mixing the dough, rolling it out, locking in and laminating the dough with butter, shaping, proofing, and baking! We will also discuss other shapes and pastries that can be made from the dough.
After the demonstration, stay to taste these delicious croissants with a cup of coffee or tea!
Kneads is a small family run bakery, cafe, and flour mill in Westport, CT featuring freshly milled local flour using their New American Stone Mill. They source ingredients from local farmers and produce 100% whole grain organic flour, which can be found in their unique selection of fresh artisan breads and pastries baked on site daily.
